... Today is my parents' wedding anniversary. They've been married for 27 years but it seems like they are still on their honeymoon. Ingredients
1.5kg pork spare ribs, quartered
¼ cup olive oil
In Vine Tomatoes
Rubs
1 tbs brown sugar
1 tbs salt
1 tsp chilli powder
1 tsp oregano powder
1 tsp ground cumin
1/2 tsp cinnamon sugar
½ brown onion, finely chopped
2 garlic cloves, finely chopped
Marinade
1 cup brown sugar
250ml malt vinegar
1 tsp ground cinnamon
2 tbs tomato sauce
125ml bourbon
1 tablespoon maple syrup
1 tablespoon butter
1 onion, finely chopped
1 tomato, finely chopped
1/2 tsp bay leaves powder
1 tsp cumin
a pinch of sea salt
a pinch of freshly cracked blackpepper
Method
1: Preheat oven to 180°C.
2: Combine rub ingredients in a large bowl and rub the mixture into the meat to coat completely. Leave to marinade for 2 or 3 hours in the fridge.
3: Heat a grill plate over high heat. Drizzle olive oil onto ribs and coat. Place ribs fat-side up and cook for about 3-4 minutes each side.
4: Pour in cooking marinade ingredients and a pinch sea salt in a saucepan and bring to the boil. Reduce to a simmer and cook for about 10-15 minutes until slightly thickened.
5: Transfer ribs and tomatoes to a roasting pan and pour over hot marinade. Cover with foil and cook in the oven for 1 ½ hours or until falling off the bone, turning a couple of times throughout.



mm.. you can try asian style dry rub with five spice (among others), and the marinade using hoisin, mirin, blackbean sauce instead :D
